Chocolate Peanut Butter Torte
It's no secret that chocolate and peanut butter are one of my favorite combinations, it's one of my hubby's too. In fact, it's a favorite combo of the majority of my family, I mean really, what's not to love? We had a special occasion a few weeks ago and I couldn't decide what to make. I knew I wanted to use chocolate and peanut butter because my uncle goes crazy over it but I just couldn't decide which recipe to go with. Finally, I settled on my own version of Brown Eyed Baker's Chocolate Peanut Butter Torte. Right away I knew I had to change it up because I don't have a spring form pan anymore because mine kept leaking and I tossed it. So first up I was making it in a deep dish pie pan. Second I wasn't really crazy about the idea of using nutmeg and cinnamon in a peanut butter pie so I created my own spin-off recipe based on hers.
The pie was a huge hit and as I thought my uncle went crazy over it, claiming his piece wasn't large enough. It was an all around win and I think I may have just found a new staple in my dessert repertoire.

Chocolate Peanut Butter Cream Pie - A Pie for Mikey
I have never met Jennie or her husband Mikey, I don't even believe I have ever come across her blog before this past weekend, but I know now that I will be a dedicated follower and that Jennie and Mikey and their two young daughters will always hold a special place in my heart. I'm fairly new to the world of food bloggers and I myself am overwhelmed by the response by bloggers and people around the world in response to Jennie's post about Mikey's passing.

My Birthday Cake - S'Mores Pie!
So yesterday was my birthday and naturally my husband asked me the basics, what did I want him to cook me for dinner and what kind of cake did I want? Typically that answer for me is a no brainer and I did answer my usual for dinner his specialty chicken dish and mushroom risotto (I will have to have a guest post from my husband on here one day with his dishes - they are just divine!), usually cake is easy too - ever since our wedding red velvet cake is both of our top choice for any celebration. This year though I wanted something different and since I had asked him to make a fairly labor intensive dinner I thought I take over my own birthday cake.
I did a lot of searching and finally decided on the S'Mores Pie from Steph's Bite by Bite, it looked delicious and it is just perfect for me....lots of chocolate and marshmallows and a graham cracker crust. I only varied the recipe slightly and to take my pie one step further I used my own homemade marshmallows that I made earlier in the week. It was perfect...happy birthday to me!
