It's Thursday and pizza day number 4 on PLDC...are you sick of pizza yet? Today's pizza is the companion to yesterday's black olive and mushroom pizza. Yesterday's pizza was all about me with my favorite toppings so it is only fair to make one that is up my husband's ally too which is what I prepared for today. My husband, like me, loves black olives but is not a mushroom fan at all so I whipped up a pizza with roasted red pepper and garlic chicken sausage and black olives. He loved it and it made for a very happy husband which is always a good thing. I had originally intended to add some caramelized onions to the pizza as well but after two trips to the supermarket and forgetting them both times I just nixed the thought.

Roasted Red Pepper Chicken Sausage & Black Olive Pizza
Yield: 1 pizza pie
Prep Time: 15 minutes I Cook Time; 10 minutes
Ingredients
- 1 pizza dough (homemade or store bought)
- 1/2 cup tomato sauce
- 1/2 can black olives (engaged)
- 2 links sausage (you can use any kind)
- 6 ounces grated mozzarella cheese
Preheat your oven to 450 degrees and start to prepare your pizza shell.
Grease whatever pan you plan to make your pizza in and place the dough inside. Use your fingertips to flatten and stretch out the dough so its covering your entire pan, sprinkle a little cheese on top and pop in in the oven.
Your goal here it do cook the dough slightly so it wont shrink on you later on when you add your toppings. This allows for a fully cooked dough and avoids the risk of overcooking or drying out your toppings. Keep a close eye on the shell while it's cooking, if it starts to shrink you can take it out and stretch it again.
In the meantime put the sausage in a frying pan over medium heat with some oil heated up. Cook the sausage all the way through, then slice into thin rounds and set aside.
The shell is done when it no longer looks raw, just very under cooked. It should take about 5 minutes total.
Ladle some sauce on top of the pizza making sure you stop about a half inch away from the edge to form a crust. Sprinkle the mozzarella over the top of the pizza and then place the sausage slices on top and then top it all off with black olives.
Pop the pizza in the oven for approximately 8 minutes or until it is golden brown.

Bravo for making your hubby's favorite this time. We have the same situation; I love mushrooms and they make him gag. Ah well. Your pizza looks fantastic. It makes me think that it's about time for me to make another!
Seeing all of these pizza posts makes me want pizza tonight...but what kind to have?
