S'Mores Bars



Here are we again, right back to my s'mores obsession. After I made these bars and took my first bite I had a moment of ahhh here we meet again. I don't know what it is about the chocolate, marshmallow and graham cracker combination that sends my heart a flutter but it's there and I always find myself going back for more. In fact, I'm munching on one of these, this very moment as I type up this post.

I came up with this recipe through a little trial and error. I had originally searched a bunch of recipes but none were exactly what I was looking for, I wanted something dense and more bar like than cake or cookie and I wanted to nix the graham layer on top and have the marshmallows star. I love how these came out, they have the perfect balance of chocolate, graham and marshmallow. The only mistake I made was trying to cut the bars before they fully cooked with only resulted in a huge sticky mess. Once they cooled fully they cut quite nicely and came out perfect.


I was pretty liberal with the chocolate layer and used a variety of chocolate using Hersheys bars, Dove bars, chocolate chips and even some other chocolate I had lying around. I thought it would be fun and whimsical to use a variety of milk and dark chocolates and it tasted delicious!

S'Mores Bars
Yield: 16 bars
Prep Time: 10 minutes     I     Bake Time: 30 minutes

Ingredients:
  • 1 cup graham cracker crumbs
  • 1/2 cup light brown sugar
  • 1/4 cup canola oil
  • 2 tablespoons butter, melted
  • 1 egg
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups mini marshmallows
  • 8 ounces chocolate
Preheat your oven to 350 degrees.

Combine the graham cracker crumbs, brown sugar, salt and baking powder in a bowl and whisk until the ingredients are mixed fully. Next add in the remaining wet ingredients and mix the ingredients until you have a firm dough.

Line an 8x8 pan with parchment paper and press the graham cracker dough into the bottom of the pan. Cook the bars for 20 minutes and remove from the oven. Top the graham cracker with chocolate covering the entire graham cracker layer and then cover the entire pan with marshmallows.

Bake for another 10 minutes and remove from the oven. Allow the bars to cool fully before removing them from the pan and attempting to cut them.

yum!! I just started going through a marshmallow phase, I completely forgot how good warm gooey marshmallows are? These have to be next on my list, they look great!
