The Baked Brownie


A couple of months ago I told my hubby that on a trip to Brooklyn to gather up some goodies and grab lunch that we were going to need to make a detour for dessert. To his initial display I had him make a trip a good 20 minutes out of the way to go to Baked for a couple of their brownies. I had seen them on Food Network's The Best Thing I Ever Ate to get one of their Sweet and Salty Brownies and their original Deep Dark Brownie. The trip was totally worth it and in the end he was totally thrilled that we made the trip, they were AMAZING brownies!


You can imagine my delight then when I found a copy of the Baked Brownie recipe online which came directly from the company's cookbook. I knew I had to try it out and soon. As soon as I got the batter together I could just tell this was going to be the best brownie I had ever made from scratch and let me tell you, this recipe didn't disappoint. It was dense, rich and super chocolate-y and well just heavenly. The recipe comes courtesy of their cookbook and is definitely going to be my new go to recipe, the only change I made to the recipe was nixing the instant espresso powder mainly because I didn't have any in the house, they tasted great still and I don't even think I would add them in the next time I make these.

The Baked Brownie
Yield: 24 brownies
Prep Time: 15 minutes     I     Bake Time: 30 minutes

Ingredients:
  • 1 1/4 cups flour
  • 1 teaspoon salt
  • 2 tablespoons unsweetened cocoa powder
  • 11 ounces dark chocolate broken into pieces
  • 1 cup butter cut into 1-inch pieces
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed light brown sugar
  • 5 eggs
  • 2 teaspoons vanilla extract
Preheat your oven to 350 degrees, grease a 9x13 inch glass pan with butter on the bottom and all sides (I also sprayed the pan with cooking spray just to be on the safe side). 

In a large mixing bowl whisk together the dry ingredients (minus both sugars) and set aside.

In a separate bowl combine the chocolate and butter and put in the microwave or over a double boiler and cook until fully melted, add the sugar to the mix and whisk until they are full combined.

Let the mixture come down to room temperature and add 3 of the eggs to the chocolate mixture whisking until fully incorporated and then add in the final 2 eggs whisking continually. Add in the vanilla and stir into the mixture careful not to over beat it.

Start to add the flour mixture to the chocolate slowly using a rubber spatula to fold it into the mix until the flour is mixed in fully.

Pour the batter into the greased baking dish and bake for 30 minutes. Let the brownies cool completely before slicing.

Oh man, I'm clearly going to have to trek to Baked! You sold them! Doesn't look to far from where I live.
