Loaded Potato Dip


Dip is kind of my thing. I don't discriminate, I absolutely love all dips and dip anything and everything that I can...including eggs in ketchup.

I need to hit the pause button here because this is something my husband has tried to ban numerous times in our household. Hot sauce is okay in his opinion but the second I reach into the refrigerator and come out with the bright red bottle the alarms go off in his head and the comments start to roll...


"That's disgusting!"


No sweetheart, it's actually quite yummy.

"Ketchup and eggs don't belong together. Ever."


Well yes, they do. Not all the time. Just on those special times when I'm really, really in the mood for it. Then anything goes. Ask my dad, he loves that combo too.

In all honesty ketchup and eggs are not that common of a combination in my house but all kinds of other dipping combinations that do show up quite often. Hubby often jokes that we have a condiment fridge (well maybe not joke, there I times I think he secretly wishes he could toss one or two...or maybe a dozen condiments) but hey I like my condiments!

But back to the dip. This dip was very well received by everyone who came over for hockey night (GO RANGERS!!), especially by my brother-in-law who could have eaten it all himself. I think this chip is best served with a thick cut crinkle potato chip (my fave are the ones from Trader Joes!) but really this dip will work on any vehicle you choose. It has all the goodness of a loaded potato and is just so lip-smackingly delicious. Make it the night before you plan to serve it if you can so the flavors will really have a chance to meld together.

Loaded Potato Dip
Yield: 2 cups

Prep Time: 10 minutes

Ingredients:

  • 2 cups low-fat sour cream
  • 6 slices bacon, cooked and chopped into small pieces
  • 4 ounces cheddar cheese shredded
  • 2-4 green onions (more or less depending on your preference)
Stir all of the ingredients together in a large bowl and allow to sit overnight. Serve cold on thick cut potato chips.

Ha! The first time my hubby made breakfast for me I grabbed the ketchup to smother my eggs and he shouted "stop! what are you doing?!" He was horrified that I hadn't even tried my eggs before slathering them in ketchup. That was the beginning of my foodie-dom.
This dip looks perfect, it would be a big hit in our house.

You have to try taking it one step further and adding fries.
There were a few years where I made many many trips to the UK, and by that I don't just mean London, so often my hours would mean there wasn't that many places open and had to find a pub still serving, and while I realize their food has a certain reputation, I have to admit I loved many a pub dish, one of my favorites was egg and chips, Eggs and fries and ketchup to dip. So lovely so good, I sometimes order it here in the US in diners, they usually look at me funny, oh well.

My wife is the same! She can't seem to eat anything unless it is smothered in a sauce, especially ketchup with eggs! I will definitely give this delicious dip a try to earn some brownie points!
