Candied Bacon Peanut Butter Chocolate Chip Cookies


If the name of these cookies doesn't get you, then the taste will. I promise. I made these cookies for Bakin' Friends in celebration of our first secret ingredient bacon! I knew I had wanted to make a cookie, but not just any cookie a really, really, killer - knock your socks off cookie. This cookie was that cookie. 
The recipe is actually an adaptation of Brown Eyed Baker's Peanut Butter Oatmeal Chocolate Chip Cookie, the addition of bacon in this recipe really takes this already delicious cookie over the top. The hubby loved them, friends loved them - heck I loved them! I'll warn you though, don't make these cookies unless you plan to eat them all - or at least make them when you can share them.

Peanut Butter Oatmeal Candied Bacon Chocolate Chip Cookies
Adapted from Brown Eyed Baker's Peanut Butter Oatmeal Chocolate Chip Cookies
Yield: 2 dozen cookies
Prep Time: 20 minutes     I     Bake Time: 12 minutes

Ingredients:
  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter softened
  • 1/2 smooth peanut butter
  • 1/2 cup granulated sugar
  • 1/3 packed light brown sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/2 cup instant oats
  • 1 1/2 cup chocolate chips
  • 1/2 package pre-cooked bacon
  • 1/4 cup brown sugar

Preheat oven to 350 degrees. 
Line the bacon on a plate and sprinkle brown sugar on top. Heat in the microwave for 30 seconds then turn the bacon over and sprinkle the rest of the brown sugar on top and heat for another 30 seconds. Set the bacon aside.
 Whisk together all of the dry ingredients in one bowl and in another bowl beat the butter and vanilla until well blended. Add the egg in and beat in well too.  Mix in the dry ingredients on a low speed until all the ingredients are fully incorporated.
Chop the bacon into small pieces then stir in the bacon and chocolate chips by hand using a spatula.
Using an ice cream scoop drop the cookie dough onto a greased baking sheet and bake for 10-12 minutes or until the cookies are golden brown.
