It's been a long time since I've made a quiche and honestly I've been in the mood for one for quite some time now. I had over two dozen eggs in my fridge thanks to my mom's chickens (she has 11!) so I decided it was most definitely quiche time. I had a bunch of food in my fridge leftover from breakfast the day before so I decided to use the bacon, cheese and potatoes inside. I threw the broccoli in too because I just love broccoli and cheese quiche. I also love the fact that quiche can be eaten for pretty much any meal, it's such a fun versatile dish!
Quiche is easier to make than I remembered but I did make one mistake in that I mixed the ingredients into the egg mixture and then attempted to pour it all into the pie shell at once. I totally forgot that you need to put the ingredients in the shell first and then pour the egg mixture over the top of it. Not a game changer or anything, but it certainly would have made my life easier had I remembered this step.
Anyway, the quiche came out delicious regardless....even despite the fact that I decided to buy pie crust because I was pressed for time but it fell apart when I took it out of the package and I had to re-roll it anyway....after which I realized I could have just made the crust anyway in the same amount of time, it was delicious and got two thumbs up from hubby!
Broccoli, Gouda, Bacon and Potato Quiche
Yield: 8 Servings
Prep Time: 10 minutes I Cook Time: 25 minutes
Ingredients
- 4 eggs
- 1.5 cups milk
- 1/2 teaspoon salt & pepper
- 1 unbaked pie crust
- 4 slices bacon cooked and chopped
- 4 ounces chopped broccoli
- 6 ounces shredded gouda
- 4 ounces cooked potatoes sliced
Preheat your oven to 350 degrees.
In a pie dish press the unbaked crust into it pan and set aside. In a large mixing bowl whisk the eggs, milk and seasonings and set aside. In another mixing bowl mix together all of the ingredients and pour into the pie crust. Pour the egg mixture over the ingredients and bake until a knife comes out clean, approximately 25 minutes.
Have fun with this recipe, change it up - add new ingredients, take out others and make it exactly how you'd like it!

I love adding potatoes to a quiche - they make it much more filling to me. A little cheese and broccoli never hurts either!
Mmmm, I too love potato quiche - this looks fantastic! The gouda should be an interesting contrast :)
