Not Your Typical BLT


The BLT is one of my favorite comfort food sandwiches, well just about any sandwich is, but the BLT is way at the top for me, especially this one. As you may notice in the photo this particular BLT is not quite a BLT...it's more like a BGT. As in bacon, guacamole and tomato...on a fried bagel.

You read that correctly. Bacon, guacamole and tomato on a fried bagel. It is simply divine and paired with a bowl of tomato soup on a rainy day is just perfection after a busy day.

You may be asking why change a good thing? Well my friends, the only answer to that question is to make a good thing even better!

BGT Sandwich
Yield: 2 sandwiches
Prep Time: 10 minutes     I     Cook Time: 15 minutes     I     Assembly Time: 10 minutes

Ingredients

  • 2 bagels (I used day old bagels)
  • 1 avocado
  • 6 strips of turkey bacon (regular bacon is good too)
  • 2 medium tomatoes or 1 large tomato
  • Butter for frying
  • Mayo (optional)
  • 1 tbs salsa
  • 1/8 tsp onion powder
  • salt & pepper
Start by preparing the guacamole. There's two ways to make homemade guacamole in my eyes, the traditional way with fresh onions and such or the "cheat" way which I actually prefer since I don't like red onions and, as a bonus, it's really simple. Cut open the avocado and remove the pit. Using a spoon scoop out the avocado and put into a bowl. Mash the avocado a little with a fork to get the larger lumps out. Stir in the salsa, onion powder and salt and pepper to taste. Mix well and voila, you have quick and easy guacamole. 


Next heat up a frying pan to cook the bacon in.  When it's hot, cook the bacon to your liking (in my case extra crispy for my husband and medium crispy for me). Lay the cooked bacon on a paper towel to absorb any excess oil and set aside (I put it in the oven to stay warm). 

Wipe the frying pan clean of any grease and slice open your bagels. Spread some butter on the inside of all four halves and place one face down in the frying pan and spread some butter on the top of the bagel. Fry for a few minutes on each side until crispy and then repeat until you have fried all four halves.




When all of the bagels are fried it's time to begin assembling the sandwiches. I spread a little mayo on the bottom half of the bagel but if you're not a mayo fan just omit it. On top of the mayo layer the tomatoes covering the surface of the bagel. Then put on the guacamole, bacon and the top half of the bagel. 

It's simplicity at it's finest and it is delicious.

now that sounds like my kind of sandwich! I love the idea of using guacamole with the bacon!

I think the idea of using guacamole gives you so much more flavor than using lettuce. Also the bagel looks so toasty-great sandwich!

I love avocado with bacon - just works so well together. I call it BLAT's at my house :) Fried bagel - now that sounds good!

Fried bagel sound pretty awesome. You can never go wrong with bacon and guacamole either.
