Eggs in a Basket


After a long weekend away and lots of time spent in the car yesterday the last thing  I wanted to do when I got home was cook a big meal. But after most trips (this one included), I wasn't in the mood to eat out. So I decided to make some breakfast for dinner and whip up some eggs in a basket. The concept is really simple, take some toast, cut a hole, crack an egg in the middle and you have a delicious breakfast. Even though it's the same thing as eating eggs and toast for some reason eggs in a basket just tastes so much better. The yolk becomes super gooey and just oozes right onto the bread, it's making my mouth water just thinking about it. 

I used Texas Toast from Trader Joe's for my bread because it's thick and butter and crisps up so nicely. To me it's the perfect bread for this meal, but feel free to change it up and use your favorite bread. A bagel also makes for a good eggs in a basket, especially since the hole is already there ready to use!


Eggs in a Basket
Yield: 2 servings
Prep Time: 5 minutes     I     Cook Time: 10 minutes

Ingredients
  • 4 slices Texas Toast (any thick sliced bread will do)
  • 4 eggs
  • Butter
  • Salt & Pepper
  • 4 oz sliced cheese (I used Gruyere)


Heat a large frying pan over medium heat and grease with cooking spray or a little butter. Take your bread and butter both sides and place two slices in the frying pan and cook until they are toasted slightly.

Using a knife cut a small hole into the center of the bread approximately the size of a silver dollar. Flip the bread over so the untoasted side in directly on the heat and crack one eggs into each hole. The whites may run a little bit under the bread, but that's okay they will just cook into the bread. 

Cover the pan and allow to cook over low heat until the whites almost fully cooked. 


When the whites are almost fully cooked place your cheese on top, turn off the heat and cover the pan again until the cheese is melted.

The Gruyere I used was cut a little thick so it never melted fully so be sure to slice your cheese thin if you want it very melty. 

Repeat process again for second serving. I served my Eggs in a Basket with some sliced sausage, bacon and homefries.
