My Birthday Cake - S'Mores Pie!


So yesterday was my birthday and naturally my husband asked me the basics, what did I want him to cook me for dinner and what kind of cake did I want? Typically that answer for me is a no brainer and I did answer my usual for dinner his specialty chicken dish and mushroom risotto (I will have to have a guest post from my husband on here one day with his dishes - they are just divine!), usually cake is easy too - ever since our wedding red velvet cake is both of our top choice for any celebration. This year though I wanted something different and since I had asked him to make a fairly labor intensive dinner I thought I take over my own birthday cake.

I did a lot of searching and finally decided on the S'Mores Pie from Steph's Bite by Bite, it looked delicious and it is just perfect for me....lots of chocolate and marshmallows and a graham cracker crust. I only varied the recipe slightly and to take my pie one step further I used my own homemade marshmallows that I made earlier in the week. It was perfect...happy birthday to me!

S'Mores Pie 
Adapted from Steph's Bite by Bite
Yield: 8 servings
Prep Time: 20 minutes     I     Bake Time: 25 minutes     I     Chilling Time: 2 hours

Ingredients

  • 8 graham crackers pulsed into crumbs
  • 1/2 cup butter melted
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 1/4 cups chocolate (any kind)
  • 2 tbs sugar
  • 1/4 tsp salt
  • 2 eggs
  • 1 bag large marshmallows 
Preheat your oven to 325 degrees.

In a small mixing bowl prepare the crust by mixing the graham cracker crumbs and the melted butter using a rubber spatula. Then using the spatula or your hands press the graham cracker mixture into a 9 inch pie dish, be sure to form an even crust and go up the sides a little bit.

Next prepare the chocolate filling by putting the milk and cream in a saucepan over medium heat. Heat the milk and cream until it starts bubbling and begin stirring the chocolate in, stirring until it is fully melted. In another mixing bowl whisk the eggs, sugar and salt until the eggs become pale yellow in color. Once the chocolate is fully melted remove from heat and slowly add the eggs to the chocolate mixture whisking the filling the entire time. When all the ingredients are fully incorporated pour the filling into the pie crust and bake for 20-25 minutes. 

Keep a close eye on the pie to make sure the filling doesn't over cook. The filling is done when the pudding center is set. 

Remove from the oven and cover the entire top with marshmallows putting on as many as you can fit. 

Turn your oven's broiler on high and place the pie inside. Keep a close eye on the pie so the marshmallows don't burn, I broiled my pie for about 3 minutes and it came out golden brown.


Place the pie in the refrigerator and chill for 2 hours.

And that's it, a delicious pie that tastes just like my favorite summertime treat, and even better one big slice leftover just for me!
