Almond Chocolate Chip Pancakes


Breakfast is probably my favorite meal of the day; pancakes, waffles, crepes, omelettes, hash browns, you name it, I love it all. Up until today I had always thought I made good pancakes, then after watching The Pioneer Woman's new television show I made one slight adjustment to my recipe and voila, my pancakes just got kicked up to a whole new level. It was amazing, who knew that just a little bit of melted butter in the batter would make the pancakes so much more delicious. I owe you Pioneer Woman, this is the second of your tips I've followed just this week and both have turned about to be amazing.

Onto the recipe, who doesn't love a chocolate chip pancake? For me it makes me feel like I'm a kid again. I like to add sliced almonds into the recipe to class it up bit, plus the almonds really add a nice flavor profile to the pancakes. These pancakes are delicious, the next time you have a free morning you must make them.


Almond Chocolate Chip Pancakes
Yield: 1 dozen pancakes
Prep Time: 10 minutes     I     Cook Time: 10 minutes

Ingredients

  • 1 1/2 cups flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1/4 cup slivered almonds
  • 1/4 cup chocolate chips
Whisk all of the dry ingredients in a large bowl. In a separate bowl whisk the egg and milk together and then add the mixture into the dry ingredients whisking until you have a smooth batter. Pour in the melted butter and stir into the batter.

Stir in the almonds and chocolate chips and set aside until your pan in heated up. 

Heat your frying pan over medium heat and grease it with either a little butter or cooking spray (I always use cooking spray). Use a 1/4 measuring cup to ladle batter into your pan. Cook the pancakes until they form fish eyes and then flip over and cook for about a minute on the other side.

Serve with a pan of butter and some warmed up maple syrup and of course a steaming cup or coffee or a tall glass of milk.

Isn't it amazing how melted butter makes everything more decadent? They look amazing! I'd love to try these 'cakes with a bit of almond flour too! :)

Did a pancake breakfast with friends just this weekend! Almonds are an amazing addition to CCpanckakes, wish we would have tried it! PS love the name of your blog, similar to mine: pour l'amour du beurre

Oh goodness these look fantastic. I love breakfast any time of the day, but pancakes do rank VERY high on my fave breakfast foods.

Melted butter? Huh? Why wouldn't that make it better, I mean it is Butter! I am going to have to try this next time I make pancakes!!!
