Biscuits with Gravy

I have a little bit of a secret. Though I'm a born and raised New Yorker and I highly doubt I will ever leave, there's a little bit of something inside me that belongs somewhere else. I have a thing for the slow pace and lifestyle associated with the south, I'm a big fan of Nicholas Sparks books and whenever I read them I always find myself imaging my life there. Or maybe doing the like Pioneer Woman and moving onto a farm and living up the slow and easy life, forgo the hustle and bustle of suburbia. Will I ever do it? Probably not, but a girl can dream.

All that being said I have a thing for southern food, there's something so comforting and warm in those dishes and I can't get enough of them. Chicken fried steak, biscuits and gravy, sweet tea. I love it all. How many of you always make a point to stop off at a Cracker Barrel on road trips? It's the kind of food that makes you feel all warm and fuzzy inside and with the rain and threats of hurricanes, tornadoes and earthquakes lately I have to take a moment to share a little of that warmth with myself.

I'm not claiming to be any sort of an expert on biscuits and gravy, but hey it was exactly what I needed when I needed it.

Biscuits with Gravy
Yield; 1 dozen biscuits
Prep Time; 30 minutes     I     Cook Time: 15 minutes

Ingredients:

  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 stick unsalted butter, cut into cubes
  • 3/4 cup cold buttermilk
Preheat your oven to 350 degrees.

Combine all of the dry ingredients in a large bowl and whisk until they are well-blended. Pour the dry ingredients into a food processor and add in the cut up butter. Pulse the ingredients for a few seconds until the  mixture looks very crumbly.

Pour in the buttermilk and pulse until the dough starts to gather in clumps. Remove the dough from the food processor and put the dough on a floured surface using your hands to form the dough into a ball.

Pat out the dough until it is about 3/4 of an inch thick and use a biscuit cutter to cut out the biscuits. Continue until you have finished making all of the biscuits.

Place the biscuits on a greased baking sheet and bake for 10-12 minutes, or until the tops are golden brown.

Now for my disclaimer, I have never made true southern gravy for biscuits and gravy. I admit it, I cheat. It's a terrible thing to even admit on here on my blog, I'm intimidated by the long list of ingredients and I have always made it using the McCormick packets. Don't judge me, I know I have to go find a kick butt recipe for gravy now and go make it and finally make biscuits and gravy totally from scratch. It will happy, and soon.
