Birthday Cake Oreo Cream Cheese Blondies


I'm posting late today because quite frankly the Rangers are just draining me. Any of you catch that game last night? THREE overtimes! That essentially means they played nearly two consecutive games of hockey last night and as much as my brain told me to just go to sleep, I stayed up watching all of it while playing Tomb Runner to keep the stress of the game at bay.

Between pinning things on Pinterest, the Rangers and that damn game I'm gonna need a vacation to wind down. Which is probably a good thing seeing how the hubby and I are leaving for Costa Rica this weekend!! I'm looking forward to the sun, beach, relaxing and some delicious food and drinks on hand at all times. Hubby on other hand has his priorities in order and has been keeping me apprised of them all.

The other morning as I was laying in bed trying to ignore the fact that I should get up and get moving he yelled at me from the other room...


"93!"


I wasn't even sure how to respond to this because it made no sense in any form or train of thought, so I just rolled over and pick up my tablet to start playing Tomb Runner.

"93 Kristin!" He shouted again from the doorway. I looked at him and asked "93 what babe?"

"It's 93 degrees in Costa Rica and it's not even 8 a.m. yet!!"


Oh. I didn't have much to say to that. I mean Costa Rica is where I have been wanting to go for, well forever and to be honest I hadn't really taken the incredibly hot weather into account. So I responded with a meek smile.

"Well maybe it's like Las Vegas and it's dry heat."

He snorted in reply and left the room muttering something about humidity.

But I guess that is neither here nor there and really has nothing to do with the recipe I'm about to post. It's really just an explanation why it's noon and I have yet to post anything today.

I really should make him these blondies as a consolation for the heat I'm about to make him endure, but I've got packing and some working to do so they'll have to be put off til we get home from vacation.

I found this blondie recipe from Baker Street's blog and these blondies are just to die for. I cut the amount of butter used in half and swapped up regular oreos for the birthday cake ones and now I am desperately wishing they still made them because they were just incredible. Don't get me wrong they were still delicious with regular oreos but wow do I wish I could get my hands on some of the birthday cake kind.

I'm going to hit the pause button here and say do not make these with double stuffed oreos. Hubby and I thought we were being clever the second time around that I made these and made them with double stuffed oreos, but they were actually too high and there wasn't enough dough to allow the layers to seal properly which resulted into very delicious blondies that kept falling apart. Trust me on this one, bigger isn't better.

I'm also going to add a second note here because I'm not sure why Baker Street's came out with these pretty little crumbles on top, mine were flat. I have no idea why, but I don't really care because they were insanely good. A friend even told me they were the best homemade dessert she's ever had, well ever. These blondies are serious diet deal breakers, you will want to eat every single one of them.

I kid you not. Consider yourself warned.

Birthday Cake Oreo Cream Cheese Blondies
Yield: 2 dozen blondies

Prep Time: 20 minutes     I     Bake Time: 25-30 minutes

Ingredients:

  • 1 stick softened butter
  • 3/4 cup packaged light brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 3 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups chocolate chips
  • 8 ounces softened cream cheese
  • 2 tablespoons granulated sugar
  • 1-2 tablespoons milk
  • 24 birthday cake (or regular) oreos
Preheat your oven to 350 degrees. 

Cream the butter and sugars until they are well blended and then add the eggs and vanilla mixing until they are combined.

Add the flour, salt, baking soda and chocolate chips mixing until combined.

Press half of the dough into the bottom of a well greased 9x13 baking dish, bake for 8-10 minutes until slightly browned.

While the bars are baking beat the cream cheese and sugar adding enough milk to make the mixture spreadable. Once the bars are done remove them from the oven and spread the cream cheese mixture over it. Top the all of the oreos and then press the remaining half of the cookie dough on top.

Bake the bars for 25-30 minutes or until the bars are set. Allow them to cool fully before cutting.

I was also up late watching the Rangers game, it was a long one! And having been to Costa Rica, I can tell you that it's just plain hot and humid! Be warned that nothing will ever dry while you are there!

Great looking blondies too. Blondies rank way higher than brownies for me :)
