It's a big week for me here at Per L'Amore Di Cibo! This coming Saturday is one year since I started this blog and honestly I can't believe a year has come and gone already. Like every new year I'm setting some new goals for myself here and hopefully I will stick to them (unlike so many New Years resolutions!). So to start this week off right I present to you Cookie Dough Eggroll Bites.
These little treats should probably come with a warning...because number one - they are really, really good and number two - they are really easy to make! That sort of combination is just dangerous in my book, then pairing it with a little vanilla ice cream and really you got yourself a perfect little dessert....or a big dessert if you decide to make more than one.
I like to keep eggroll wrappers in my refrigerator because they're so versatile. I've made ravioli out of them, fried bananas, crab rangoons ( both of which you can see here) and of course these cookie dough bites. This recipe calls for refrigerated cookie dough mostly for the ease of the fact that they're portioned properly and the cookie dough is very firm which allows the dough inside to cook and not melt which would just lead to a very yummy mess!
The secret here to end up with fully cooked cookies inside is to bake them in the oven in addition to pan frying them. Unless of course you love warm, raw cookie dough. If that's you, a nice pan frying will give you a gooey, chocolatey, buttery delicious little bite.
Cookie Dough Eggroll Bites
Yield: 1 Serving
Prep Time: 5 minutes I Cook Time: 5 minutes
- Eggroll wrappers (1 per cookie dough piece)
- Pre-made cookie dough, separated
Preheat your oven to 350 degrees.
Place a piece of cookie dough in the center of an eggroll wrapper. Using your fingers dampen the edges and then fold the edges over towards the middle until you have fully sealed the cookie dough inside.
Melt a little butter in the microwave and brush all over the eggrolls. Next place the cookie dough eggrolls on a greased baking sheet and bake for approximately 7 minutes.
Remove them from the oven and then add a small amount of butter to a frying pan and pan fry the eggrolls until the outside becomes nice and crispy.
Serve with some vanilla ice cream.
