Red Velvet Brownies


I love Red Velvet Cake. We had it as our wedding cake, we celebrate every year on our anniversary with one and really just about any special occasion can call for a red velvet cake in my book. One of my other favorite desserts are brownies so you can imagine my excitement when I was browsing on Pinterest earlier today and saw red velvet brownies! Simply amazing. I started to Google recipes and after a lot of browsing I decided that since it was nearly 9 o'clock at night I would do the short cut version of them and worry about making them from scratch the next go around.

The recipe involved using a box of red velvet cake mix plus a few other ingredients and resulted in a rich, decadent brownie that is unlike any other I've ever tasted and did I mention the cream cheese frosting? Yea, that's right, they were amazing and I highly, highly recommend making them....now.


Red Velvet Brownies
Yield: 16 brownies
Prep Time: 10 minutes     I     Bake Time: 45 minutes

Ingredients


For the Brownies:

  • 1 box red velvet cake mix
  • 1 1/2 cups chocolate chips
  • 1/2 cup water
  • 1 egg
  • 3/4 cup butter melted
For the Cream Cheese Frosting:
  • 8 ounces whipped cream cheese
  • 2 tablespoons of butter softened
  • 1/2 confectioners sugar
Preheat your oven to 350 degrees.

This is essentially a "dumb cake" type of recipe. Put all of the ingredients except for the chocolate chips in a large mixing bowl and mix well until all the ingredients are well incorporated. Add the chocolate chips in and mix them in until they are well blended. 

Pour the batter into a well greased 8x11 pan and bake for 45 minutes. When you take the brownies out of the oven they will seem like they are still undercooked. That's okay, as they cool on the counter the middles will continue cooking a bit and you will end up with a rich fudgy brownie.

It's just beautiful isn't it?


While the brownies are cooling using a whisk or a hand mixer whip the frosting ingredients together until they are well blended. I like to use whipped cream cheese because it results in a lighter frosting and it comes together much easier. 

Once the brownies are halfway cooled ice them generously with the frosting. 

Enjoy with a tall glass of milk!
