Cheesy Creamed Spinach


Spinach is a new found love of mine, especially fresh baby spinach. Because of my newly acquired taste for spinach I decided to try creamed spinach once again. I didn't go by any recipes, just a little trial and error until I achieved the taste I was looking for.

It was the perfect side dish to our dinner that night and the only complaint was everyone wished there was more! This is definitely going into the food vault for future use.


Cheesy Creamed Spinach
Yield: 2 Servings
Prep Time: 5 minutes     I     Cook Time: 10 minutes

Ingredients

  • 1 pound fresh spinach
  • 1/4 cup shredded mozzarella cheese
  • scant 1/4 cup of milk
  • salt and pepper to taste
Heat up a little olive oil in the bottom of a deep saute pan over medium heat and toss the spinach inside. Cover the pan and let the spinach cook until it has wilted down.

Add in the remain ingredients and let the mixture continue to cook down stirring occasionally. Lower the heat and continue to cook until the milk and cheese have thickened into a creamy sauce and the spinach has fully wilted down.

That's always the problem with spinach - there's never enough! The hugest bunch cooks down to nothing! I have to say this is one of my fav creamed spinach recipes I've seen - simple and not loaded with cream & butter. Sounds delicious with the mozz!

Looks great. We eat a LOT of spinach and, you're right, there's never enough.

Spinach is definitely one of my favorites and this version looks quite tasty!
